pineapple salsa

Fresh pineapples are juicier and yield more fruit than their canned counterpart. I had some leftover pineapple after having a pineapple and mint fruit salad and so I decided to turn in to something that’s both sweet and spicy = a pineapple avocado salsa. This is so good on it’s own or as an accompaniment to a fish or chicken dish. We had it as a taco filling, topped with a little yoghurt to offset the spiciness. It was full of flavour and it’s good for you! Here are the ingredients you will need: (this makes a big bowl for about 3 to 4)

1 and a half cup pineapple

Half a tomato chopped

Half an avocado chopped

Half a cup mixed yellow and green peppers chopped

Half a cup sliced and chopped red onion

1 medium sized cucumber chopped

Half a lemon squeezed = 2 to 3 tablespoons lemon juice

1 teaspoon salt, paprika and cumin

For garnishing, you will need:

A handful of pomegranates

Mint leaves

Coriander leaves

Half a sliced green chilli

Place all the ingredients in to a bowl and pour the lemon juice over the salad. Sprinkle with garnish and serve.
